Slow Cooker Turkey Kielbasa, Lentil & Spinach Soup

Here is another one of my favorite slow cooker recipes that I wanted to share with you! This one is filling, delicious and also very easy to make.

Turkey Kielbasa, Lentil & Spinach Soup


Slow Cook 2 hours on High or 4 Hours on Low
2 medium-size carrots, cut into 1/4 inch pieces
1 large onion, chopped
1 celery stalk, cut into 1/4 inch pieces
2 garlic cloves, minced
7 ounces turkey kielbasa (from a 14 ounce package) cut into 1/2 inch pieces
1-1/4 cups (from a 1-pound bag) lentils, rinsed and picked over
2 cups low-sodium beef broth
3 loosley packed cups baby spinach
1/2 teaspoon salt
1/4 teaspoon black pepper

1) Combine carrots, onion, celery, garlic, kielbasa and lentils in slow cooker bowl.
Pour in beef broth and 2-1/2 cups of water.
2) Cover and cook on High for 2 hours or Low for 4 hours. Stir in spinach, salt and pepper before serving.
